Chickweed
(Scientific Name: Stellaria
media)
Description:
A small annual with weak stems up to 1 foot long, which are
much-branched. However, the plants frequently grow so densely that
the stems support each other. Pointed, oval leaves about 1/2 inch
long grow on opposite pairs along the stem. Small, white,
star-shaped flowers have 5 petals which are deeply cleft.
Habitat:
Waste places and cultivated ground, especially in shaded areas.
Grows throughout the world and is widespread in the United States.
Young chickweed usually can be found throughout the year except in
freezing weather.
Uses: Cook young, tender stems like spinach
or use them raw in salads. Chickweed makes an excellent potherb if
used before the stems become tough.
