Description:
A perennial plant frequently growing in dense patches. Showy
orange flowers 3-5 inches long are borne at the tops of naked
stems 2-5 feet tall. The flowers wither after having been open for
just one day.
Habitat:
Originally a cultivated flower, it is now commonly found wild in
large clumps along ditches and roadsides. It prefers damp soil.
Uses: The buds and flowers are an esteemed
vegetable in China and Japan. Cook the unopened flower buds for a
few minutes and serve like green beans. The flowers can be used to
thicken soups and stews. Both buds and flowers can be dried for
future use. The clusters of underground tubers found on the roots
are excellent if boiled for about 15 minutes.
